Kai Lan and Shiitake Mushroom Fried Rice

Craving for some comfort food which hits all the right nutritional and taste markers? Then try your hand at this easy Kai Lan and Shiitake Mushroom Fried (Brown) Rice recipe to satiate your cravings.



Ingredients


250 gm VertiVegies Kai Lan

100 gm sliced Shiitake mushrooms

2 tbsp light soy sauce

1 1/2 tsp dark brown sugar

1 tsp Sriracha hot sauce

2 tbsp vegetable oil

1 tsp fine salt

1/2 medium yellow onion

400 gm steamed brown rice

2 cloves of garlic

2 large eggs

2 scallions




Recipe


Prepare vegetables by cutting the Kai Lan crosswise and side to side. Slice the Shiitake into even strips, chop onion, mince garlic and scallions and beat eggs. Mix in sugar, soy sauce and Sriracha in a small bowl and stir until the sugar has dissolved. Heat 1 tbsp of oil in the wok over medium-high heat until the the oil starts to shimmer. Add in mushrooms and 1/2 tsp of salt and cook. After 3 minutes, remove mushrooms from the wok and keep warm. Heat the remaining oil in the wok till it starts to shimmer as well. Add in the garlic and onion and stir fry till fragrant, about 3 minutes. Add in the Kai Lan and stir fry for another 2 minutes. Add in brown rice and mushrooms and stir fry for another 4 minutes. Add in the soy sauce mixture and stir to combine. Push the rice to the side of the wok, creating a hole in the middle, and add in the beaten eggs. Stir the egg mix for about 2 minutes before mixing it in with the rice. Stir in scallion and remove from heat. Plate and serve hot.


Pro Tip


Overnight leftover rice (instead of freshly cooked rice) is the best kind of rice to use for this dish. Store uneaten fried rice in a container and reheat the next day for a quick, tasty lunch on the go!
