Kale & Ginger Daiquiri

A daiquiri is a classic cocktail which uses rum as its base, citrus juice and a sweetener. Generally believed to have been invented in Cuba in the early 1900's. This tweak on the classic daiquiri introduces the earthy and nutty taste of locally grown, pesticide free Tuscan Kale and the zesty and warm flavors of fresh ginger making it a healthy (and boozy) libation.




Ingredients


1 cup demerara sugar

1 cup water

1/2 cup fresh ginger


45 ml white rum (our go-to bottle for this cocktail is Plantation 3 Stars)

15 ml fresh lime juice

15 ml ginger syrup (recipe below)

80 ml fresh VertiVegies Tuscan Kale juice





Recipe


To make the syrup, heat demerara sugar and water over low heat, stirring until sugar is dissolved. Add in sliced ginger and remove from heat. Allow to steep covered for at least 60 minutes.


Add rum, lime juice, kale juice and ginger syrup into a cocktail shaker with ice and shake vigorously for at least 10 seconds. Strain into a chilled coupe glass and garnish with a piece of candied ginger.


Pro Tip


Instead of shaking the mix, add all the ingredients into a blender and blend with 1 scoop of ice to make a frozen daiquiri (or smoothie if you will.)
